Creamy Pumpkin Soup



 I'm a big fan of soup, especially creamy soup. Since, now it's season of the pumpkin I cooked Creamy Pumpkin Soup and have to say that... I love it. It's very easy to prepare and you only need just a few ingredients:
 600g pumpkin, peeled
 1 onion
 1 potato
 2 carrots
 2 garlic cloves
 2 tablespoons olive oil
 1/2 nutmeg, to serve
 750ml chicken soup
 125ml pure cream
 4 slices wholemeal seeded bread



In a saucepan heat the oil, over medium heat. Add garlic with peel and cook for 1-2 minutes until soft, then remove from the pot. Add onion, vegetables chopped and nutmeg, then toss to coat. Add chicken soup and then bring to the boil. Reduce heat to low, cover and cook for 25 - 30 minutes or until the vegetables are tender.
Transfer all to a blender, with the garlic (without peel) and process it until smooth. Return soup to the saucepan and place over low heat.
Served with homemade croutons, then drizzle with extra oil and top with seeds (if you have, unfortunately, I forgot to buy :( ).
